With the change of fall/winter, there are new veggies out on the market now. My newest recipes have to do with pumpkin. All these years I thought to myself, "what else can be done with pumpkin". Here are two new recipes I have learned from friends:
Pumpin salad:
slice 1\2 onion. Shake salt over the onion and let sit for about 10 minutes. This removes the acid of the raw onion. Then, add two boiled eggs, cooked pumpkin (i cut the pieces into bite sized and put in the microwave for about 5 minutes, or until soft), and mayo. Mix, flavoring with salt and pepper.
Nina and I love this salad. Thanks to my friend Ayako.
Hot pumkin (japanese style)
Peel off some of the skin on the pumpkin and cut in bite sized pieces. moisten the pot with water, and then put the pumpkin in, skin side down. Add enough water to almost cover the pumpkin, leaving the tops open. Then add 1 tbsp mirin, sake (cooking sake), soysause, and brown sugar. Bring to a boil, cover with a lid, turn down the heat and simmer for about ten minutes. then turn off the heat and let sit for about 5 minutes. You can eat this hot or cold.
Yes, one can eat Japanese pumpkin skins. Japanese pumpkins are smaller, and are green on the outside. Maybe you can still try these with American pumpkins, but I would probably first remove the skins.
